Vietnamese Cabbage Salad

Napa cabbage with a sweet and sour dressing

Ingredients: 

Salad
4 c shredded napa cabbage
1 c shredded carrots
1/2 c cucumber, sliced into half moon shapes
1/4 c cilantro, chopped
1/4 c fresh mint, chopped
2 TBSP basil leaves, chopped

Dressing
1/4 c shallot (1 lg) sliced
1/4 c lime juice
3 TBSP agave (or 2 1/2 TBSP honey)
1 tsp apple cider vinegar

Directions: 

wisk the dressing together
toss with all the salad ingredients
