Cucumbers serve as the 'noodles' in this Thai dish
3 cucumbers, peeled and thinly sliced
1 tsp sea salt
3 TBSP basil chiffonade
1/2 TBSP minced ginger
juice of 2 limes, about 4 TBSP
2 to 3 red chilies, seeded and finely chopped
toss cucumbers with salt
let sit for about 10 minutes
strain off excess water and toss cucumbers with the other ingredients
Serve immediately
