Strawberry Mousse Pinwheel Cake

A beautiful and fantastic dessert.  Very rich and tasty

Ingredients: 

Cake   
3 c pecans, soaked 6-8 hours and dehydrated 6-8 hours   
2 c dates   
1 tsp cardamom   
1 tsp vanilla   
Mousse   
1 c pine nuts   
20 strawberries   
1 1/2 c dates   
1 tsp vanilla   
 

Directions: 

Cake   
Process everything in a food processor until smooth as possible   
Roll out about 9X13 size,  not too thin   
Mousse   
Blend all ingredients to a cream texture.  Spread over the cake and roll   
refrigerate for several hours.  Roll in chopped nuts or coconut if desired   
Slice to serve
