Raw Emerald Cauliflower Tabbouleh

Ingredients: 

1 small or ½ large head cauliflower
½ red onion, chopped small
½ cucumber, chopped
2 roma tomatoes, chopped
1 large bunch parsley, chopped
1 ripe avocado
juice of 2 lemons
½ t turmeric
1 clove garlic, chopped fine
1 t raw coconut aminos or extra salt
sea salt and freshly ground black pepper to taste

Directions: 

with a hand grater or food processor, grate cauliflower to couscous like texture
mix in a large bowl with onion, cucumber, parsley and tomatoes
in separate bowl, mash avocado
whisk in lemon juice, turmeric, garlic, raw coconut aminos
salt and pepper to taste
pour dressing over vegetables and mix thoroughly
chill before serving or can be served at room temperature.
