PBJ Salad (Pear Beet Jicama Salad)

Delicious flavor, many people who don't like beets love this salad

Ingredients: 

3 med beets grated  
2 med pears, cubed 
1 c jicama, peeled and cubed  
4 c mixed greens 
1 TBSP lemon juice  
1/2 c walnuts, optional 
  
Dressing   
1/3 c olive oil  
1 lemon, juiced 
1 cl garlic  
2 TBSP apple cider vinegar 
2 TBSP honey  
1 TBSP ground mustard seed 
1 1/2 tsp sea salt   
 

Directions: 

place jicama and pears in a bowl with the lemon juice for 30 minutes   
add the beets and stir   
place the mixed greens in a bowl   
add the mixture on top    
stir well  top with walnuts if desired 
top with walnuts if desired   
dress with honey mustard dressing   
Dressing   
blend until smooth
