Mushroom Fettuccine Alfredo

If you like cooked fettuccine you will love this

Ingredients: 

Alfredo Sauce
2 c macadamia nuts
½ c pine nuts
2 T lemon juice
2 T nutritional yeast flakes
2 yellow bell peppers
2 T fresh parsley, minced
1 t salt
½ c water – add only as needed

process all ingredients together ina food processor adding as little water as possible until a fluffy consistency is achieved

Mushrooms:
16 large mushrooms sliced
1 t wheat-free tamari (or salt)
2 t olive oil
papaya pepper to taste

marinate the sliced mushroom in the tamari, oil and papaya pepper for 10 minutes

Zucchini noodles:
5 medium zucchinis peeled and sliced 1/8th of an inch thick, lengthwise then cut sliced into noodle strips

sprinkle the noodles with 2 T of salt and stir to evenly coat the noodles
allow the zucchini noodles to sit for 10 minutes, which will soften them

mix all the ingredients together

use a mandolin to uniformly slice the zucchini
you may leave the skin on the zucchini if you desire
you may add sliced greek olives for additional flavor if desired
