Kale-Spinach Salad

Sweet and sour marinated greens

Ingredients: 

10-15 stalks of kale, remove from stems and cut into chunks   
2 c raisins, soaked an hour or more   
5 oz container of baby spinach   
1/2 sweet onion, diced   
1 red bell pepper, diced   
1/2 c olive oil   
1 TBSP ginger   
2 Cl garlic, minced   
2 TBSP maple syrup   
2-3 TBSP parsley, removed from large stems and minced

Directions: 

add the kale, oil, ginger, garlic, maple syrup and parsley to a large bowl   
by hand mix, and squeeze and massage the leaves to get them a bit more tender   
add the rest of the ingredients and toss
