Jicama Salad with Cilantro Lime Dressing

Nourishing Traditions

For Salad:
1 large jicama (about 1-1/4 pounds)
seeds from 1 pomegranate
3/4 c cilantro lime dressing

For Dressing:
1/2 c extra virgin olive oil
1 TBSP expeller-expressed flax oil
3 TBSP fresh lime juice
1 TBSP cilantry, finely chopped
1/4 tsp dried oregano
dash cayenne pepper
pinch stevia powder
salt & pepper to taste (optional)


combine dressing ingredients and set aside (ingredients will make 3/4 c of dressing)
peel and grate jicama
mix immediately with dressing and chill well
add pomegranate seeds and serve
