Holiday Chia Pudding


Yummy, no guilt treat

Sandy and Pegge

yield 1 1/4 cups
1/4 c chia seeds
1/4 c coconut, shredded and unsweetened
1 c water
1/4 c raw cashews (soaked 1 hour, drained and rinsed)
4 soft medjool dates, pitted (or raisens)
2 cloves
1 tsp lucuma powder
1/4 tsp vanilla extract
1/2 tsp powdered ginger
1/8 tsp cinnamon


place chia seeds and coconut in small bowl
stir to mix
set aside
blend the remaining ingredients until smooth
pour into the bowl
wait a few minutes and stir again
you will notice it is starting to 'gel' up a bit
wait and stir a couple more times
put in fridge for 15-20 min or until ready to eat
