Green Gazpacho

A gazpacho with green tomatoes and green peppers.

Ingredients: 

3 green tomatoes, cut into 1/2 in chunks   
1 med green pepper, cut into 1/2 in chunks   
1 med cucumber, cut into 1/2 in chunks   
4 scallions, mince both the whites and greens   
1 med cl garlic, pressed   
1/4 c (packed) parsley, minced fine   
juice from 2 juicy limes, about 6 TBSP juice   
3 c cold water   
1 tsp salt   
lots of fresh black pepper   
1 TBSP freshly mince basil, or 1/2 tsp dried basil   
2 TBSP olive oil   
1 tsp honey

Directions: 

mash the avocados with the lime juice   
put everything together and mix well   
optional puree some or all of ingredients, chill until very cold
