Greek salad without the dairy

Ingredients: 

1/2 pound baby spinach
1 lg tomato, diced
1 cucumber, peeled and diced
10 cured black olives, minced or kalamata
4 red radishes, thinly sliced
1/4 c fresh parsley, chopped
1/4 c macadamia nuts, finely ground
2 TBSP olive oil
2 TBSP freshly squeezed lemon juice
2 cloves garlic, grated or minced
1 tsp sea salt

Directions: 

put the spinach, tomato, cucumber, olives, radishes, parsley and nuts in a large bowl
toss and set aside
whisk together the oil, lemon juice, garlic, salt and pepper in a bowl to make a vinaigrette
toss the salad with vinaigrette
allow to marinate for 30 minutes
serve immediately
