Nice dish to use that summer corn

Ingredients:
4 ears corn, cut off cob
2 bonaito sweet potato, grated
1 med onion, diced
1/2 red bell pepper, diced
5 oz sun dried tomato, chopped
2 avocado, diced
1 1/2 TBSP coconut aminos
1 TBSP coconut nectar
1/2 tsp sea salt
1 lemon, juiced
4 oz sunflower seeds
2TBSP olive oil
