Cauliflower Orange Salad

Citrus type flavor

Ingredients: 

1/2 small head cauliflower, chopped   
1/2 bell pepper, chopped   
1/2 c chopped green beans or broccoli   
1 1/2 c mandarin orange segments   
3 TBSP lemon juice   
3 TBSP flax or olive oil   
1 tsp maple syrup or honey   
1/2 tsp orange zest   
salt and black pepper to taste   
serve on a bed of spinach and garnish with chives 

Directions: 

toss all ingredients and allow to marinate for 3 hours at room temp, stirring   
often, or overnight in the fridge stirring occasionally   
for a more portable version skip the bean or broccoli and add 1-2 c chopped   
spinach, allowing it to marinate and reduce within the salad
