Carrot salad with some jazz

Ingredients: 

2 carrots, grated (about 1 cup)   
2 TBSP chopped parsley   
2 TBSP chopped raw walnuts, unsoaked   
2 tsp lemon juice   
2 tsp olive oil   
1/8 tsp salt   
dash pepper 

Directions: 

mix all ingredients   
will keep for about 3 days
