Carrot Orange Parsley Salad

Carrot salad without the normal raisins, very good.

Ingredients: 

4-5 carrots julienne strips
1 orange zest and juice
3 TBLS olive oil
3 TBLS chop fresh parsley
salt and pepper optional
1 clove of garlic crushed

Directions: 

rub bowl with garlic and leave in
add zest, juice, salt and whisk in the oil
remove garlic, add carrots and most of the parsley
toss well, garnish with balance of parsley
