Carrot cake complete with walnuts and cream cheese frosting

Ingredients: 

Cake  
7 carrots  
1 c walnuts 
1 c dates  
3/4 c raisins, soaked for at least 1 hr 
1/2 tsp ginger  
1/2 tsp cinnamon 
1/4 tsp cardamom  
1/4 tsp nutmeg 
FROSTING   
3 TBSP honey  
3 TBSP orange juice 
1 c cashews soaked 

Directions: 

Cake
blend carrots in food processor until well ground, set aside   
blend walnuts until fine, put with the carrots   
place dates in food processor and blend until smooth   
add the spices and blend well   
add back the carrots and walnuts and blend the entire thing til smooth   
remove and stir in the raisins, put in a cake or pie pan 
Frosting
blend all in a VitaMix until smooth and spread over the cake
