Barley Confetti Salad

Very colorful salad, a little chewy

Ingredients: 

1/2 c barley soaked 2 days changing the water twice or three times a day
you will have about a cup after it soaks
2 bell peppers, colors to look good, red and yellow or orange
3 radishes chopped fairly fine
5 green onions, sliced
1 carrot grated
1 stalk celery, finely chopped
1/2 cucumber, diced
1 tsp cumin
1/4 c fresh lemon juice
2 Tbs olive oil
pinch of celtic sea salt
1-2 cloves of garlic

Directions: 

Drain barley
mix all well, let stand overnight in fridge for flavors to blend.
